Twig Farm is a goat dairy and artisanal and farmstead cheese producer in West Cornwall, Vermont. Their recipe for leg of goat calls for making little incisions about one centimeter long all over the meat. Rub with your favorite spices and fresh herbs and marinate in olive oil, with a little soy sauce for “as long as possible.” Cook in a 450-degree oven for 1/2 hour, then turn the over to 400 for another 45 minutes or until an internal temperature of 140-degrees Fahrenheit is reached.
