Andrew Simmons stopped eating meat between the 7th and 8th grades to blaze a teenage-vegetarian trail. Then he started slipping:

“The process was slow but steady and natural. Animal by animal, each meaty notch on my fork, the fresh flavors and the associated stories, people, and places, has marked my memory … from devout vegetarian to comprehensive meat-eater.”

In this story, Simmons takes us to Greece for crispy fried smelts and to a turkey sandwich eaten for strength before his big intramural softball game. Next came pancetta, then barbecued beef and finally, goat, which Simmons describes as “edgy, wild and wooly, sort of dirty-seeming, but in an appealing way.”

He goes on to call goat “the new pig” — a meat eaten in prominent places around the world but until recently disdained by upper-middle-class white Americans. Simmons gives us a funny read, especially when he tells of biting into a curved and rubbery bit of meat that made him think he had “bitten into the cup of a tiny bra.”
