This marinade — with a touch of creme de menthe and Louisiana hot sauce — is from Justin Wilson’s “Outdoor Cooking With Inside Help.”

Eds. Note: We think the recipe calls for four cups of Chablis wine, rather than four cups of Chablis “wind,” as stated in the ingredients.
