Butcher Shortage
People frequently tell us they would like to try goat meat but can’t find it in their stores or farmer’s market.
That’s largely because of a shortage of small slaughter houses, as detailed in this New York Times story, which says the problem could be a setback nationwide for independent farmers and the local-food movement.

We butcher our own. It’s really not that hard to do.It shouldn’t be a “setback nationwide for independent farmers and the local-food movement”. Remember, unless you come from a long line of “city dwellers”, then your parents or grandparents use to do it. Around here, mora and more folks are butchering themselves – from chickens to catle. It actually HELPS the local food farms and independence.
I think they were trying to say it’s a setback for people who want to sell meat and can’t find an inspection-approved slaughter house. They could slaughter the animals themselves and sell “underground” but if they want to get into farmer’s markets, groceries or restaurants they’re up a creek, so to speak.
