Charolais Goat Cheese

Charolais cheese, originating in Burgundy, has long been produced using both cow and goat milk but that has changed. According to Max Shrem in SlashFood, effective January 23, 2010, Charolais received a French certification intended to preserve the quality of the cheese production. In doing so, the cheese is to henceforth be produced only using goat’s milk. Viva le Fromage!
