Goat Cheese Mousse

When you think mousse, you probably think about that heavenly chocolate stuff the French are known for. Here’s a slightly different take for an appetizer found at About.com: Cheese.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: Approximately l cup of mousse

Ingredients:

  • 1/2 cup whipping cream
  • 2 tablespoons milk
  • 4 ounces soft, fresh goat cheese
  • 2 tablespoons finely chopped chives

Preparation:

Either by hand or using an electric mixer (which is much easier), whisk the cream until it has the texture of whipped cream. Set aside.

In a separate bowl, whisk together goat cheese and milk until goat cheese has softened. Mix in chives. Gently fold in whipped cream.

Serve chilled, with bread and/or crackers on the side.
